Concession Stand Procedures for WREC Members

DIRECTIONS FOR EXCHANGE CLUB MEMBERS AND VOLUNTEERS


OPERATION OF THE CONCESSION STAND AND MONITORING BASEBALL FIELDS



Opening


            
  1. Open all gates at entranceways
            
  2. Get key to concession stand from lockbox.
            
  3. Disarm the security system upon entering. Note: Punch in code slowly and deliberately until light goes green.
            
  4. Turn on front and back inside lights by switches outside panel box and when getting dark turn on outside lights by switches inside panel box.
            
  5. Unlock bathrooms. Flush toilets. Check hand soap, paper towels and toilet paper. Replenish as needed. Empty trash cans as needed.
            
  6. Order pizza from Dominoes. Telephone number is by phone, 3-cheese & 3-pepperoni, when arrive, just sign for them and put slip in cash register under change drawer. Do not tip delivery person. Do Not reorder pizza after 6:30pm unless you are sure it will be sold! No waste!
            
  7. Fill hot dog bun warmer with water. Turn it on to high. Put in hot dogs buns. Buns may be preheated in microwave to help get them ready. Watch water in bun warmer. Add periodically. Do not let run dry!
            
  8. Turn on Hot Dog roller to Setting "7" to preheat. Remove Hot dogs from refrigerator and precook appropriate amount in water in the microwave. Bring temperature of hot dogs to 155 degrees before putting on roller. Check with thermometer! Maintain temperature of hot dogs on the roller at 145 degrees.
            
  9. Turn on Chili Pot on to a setting between medium and high. Add about 3 cups of water before putting in chili pot insert. Check periodically
            
  10. Remove chili from refrigerator and put a portion (1/5th of container) in plastic container with 1 ½ cups of water and preheat chili in microwave. Bring to 155 degrees Check with thermometer! Put preheated chili in chili pot. Maintain temperature at 145 degrees
            
  11. Check Nacho cheese dispenser. Change bag if needed. Put a portion of Nachos out of bag under the counter in heating unit.
            
  12. Remove onion from refrigerator, chop onion for hot dogs.
            
  13. Make coffee, as needed.
            
  14. Heat water for hot chocolate, as needed.
            
  15. Put oil (1/4 cup), popcorn (1 full cup) and the flavoring (1 1/2 tablespoon) in popcorn popper in the machine. Turn on the machine's three switches. Listen for popcorn to stop popping, try not to burn. Turn off pan when not popping.
            
  16. Turn on cash registers. Put change money in drawers.
            
  17. Unlock and open counter windows.
            
  18. Check supply of hot dogs and chili in refrigerator. Replenish these from the freezer as needed.
            
  19. Fill ice holder of soft drink fountain as needed.
            
  20. Direct coaches to coolers and ice as needed.
            
  21. Get baseballs for umpires as needed.
            
  22. Check announcing booth equipment and confirm coaches have appropriate people in booth.
            
  23. Exchange club members are to Periodically check around fields during games and observe coaches, fans, players, etc. Enforce field use guidelines and assist when needed. Wear your hat!


    Closing


            

                      
    1. Clean Bun warmer by removing the water. Disassemble and wash with detergent in sink.
                      
    2. Wipe down the rollers on the hot dog roller with a damp cloth while the rollers are turning. Remove the drip pan and wash.
                      
    3. Remove Chili pot insert from heater. If there is chili left over then let cool. Put date on pot! , and put entire pot in refrigerator. If not then clean and dry
                      
    4. Seal and put chopped onions in refrigerator and date.
                      
    5. Turn off all popcorn switches. Discard any left over popcorn. Clean and wipe down entire unit !!!
                      
    6. Remove nachos from warming unit. Put back in bag and seal. Wipe down unit
                      
    7. Wipe all counters and equipment with Clorox solution.
                      
    8. Sweep floor as needed and take out trash to dumpster.
                      
    9. Wash utensils, pots, pans and containers used. See new procedure posted at sink
                      
    10. Count money. Place money in bags with total. Place in drop box. Lock door.
                      
    11. Make sure all equipment is turned off properly.
                      
    12. Turn lights out in restrooms. Lock doors and pull down roll up gate and lock.
                      
    13. Lock windows. Be sure to pin the large window in the center.
                      
    14. Turn off lights. Leave motion detector lights on.
                      
    15. Arm the security system.
                      
    16. Lock door-both locks.
                      
    17. Return concession keys to lock box.
                      
    18. Check all fields to confirm announcer booths and equipment box are locked and field lights and scoreboards are off!!!!!
                      
    19. Close All gates at entranceways.
