jabberbug@yahoo.com - Jodie Johnson's Recipe

Apple Bars (Jodie - Paige Johnson's mom)

2 1/2 cup flour
1 tsp. salt
1 Tbsp. sugar
1 cup margarine or shortening
1 egg yolk (reserve the white for later) - mix egg yolk with enough milk to = 2/3 cup liquid

Mix above ingredients (minus the egg white) until combined.
Divide dough into 2 halves. Roll out one half onto cookie sheet or roll out into a bar pan.
Crush 2/3 cup cornflakes and sprinkle on top of the dough.

Peel, core and slice enough apples to make 5 cups of apples. Tart apples work best, not sweet (or use a combination). Add cinnamon sugar mixture to apples to cover apples well. Pour apple mixture onto rolled out dough. Roll out the other half and place on top of the apples.
Beat the egg white until frothy. Brush on top of the crust. If desired, sprinkle cinnamon and sugar on top of the egg white bath.

Bake at 350 for about 40 minutes or until the crust is golden and crusty.

Frost with powdered sugar frosting while still hot; if desired.
Any questions or if you need a powdered sugar frosting recipe email Jodie Johnson-Engstrom at Jabberbug@yahoo.com.
Mix together 1 1 /2 cups of sugar and 1 tsp. cinnamon.
