News from last meeting of the club

Diamond Club Supporters:
At last nights meet, several questions or clarifications were asked about the rib cook.  Well, here are the answers to the best of my ability.
As far as "How many ribs per pound", this is what I've found out, and it's not an exact science.  As you know, a rack of ribs is wide on one end and narrow on the other.  The ribs we will be purchasing are called 3 1/2' s and down.  This means that the rack of ribs will weigh 3-1/2 pounds or less.  So, using 3 pound average, there will be 3 pounds, pre-cooked, per rack.  The number of ribs per pound will depend on which end you get the ribs off of.  If its the wide end (large ribs), probably 3 ribs per pound.  If it's the narrow end (small ribs), probably 5-6 ribs.
When we're packaging the ribs, we will want to put a mixture of large and small in each package.  I hope this makes sense and provides a little clarification.
It was also brought to my attention that we had a few oversights on our order forms.  Some are asking when they can pick up ribs.  Ribs will be available for pickup at 7 am on the 9th and we will shut it down around 10:30 to 11.  Yes, this should have been on the form. 
Another item is offering the customer a receipt so, if we lose the form, they will have proof that they bought ribs.  It was decided last night that, since each sheet has two forms, we could cut, or tear, the form in half and we keep one half, giving the other half to the customer.  Gayla said she would put this information on the form before sending it home with the students this week.
I would like to appologize to each of you for my "gung ho" attitude when it comes to getting things done.  I realize I might have overstepped my bounds by placing the concrete for the girl's batting cage, and thus spending club money, without a formal vote by the membership.  We had only discussed it, but had never voted.  I want to make sure that every penney recieved is fully accounted for and that every penney spent has member approval.
I had planned on giving a full financial report and membership report at our meeting last night but our secretary and our treasurer failed to show up.  I retrieved the checkbook and register from the treasurer this moring and the membership application for the secretary.  I will create these reports and send them to each of you as soon as possible.  It may be that we need to find two more people to fill those positions because the current ones have not been able to attend any of our meetings and are not members of the club.  Any input on what each of you thing we ought to do in that situation is appreciated.
The other two board members, Jimmy Windham and Karen Lafitte, are in the process of developing by-laws for our booster club.
We will put these together and bring them up for a vote.  Any nuggets of input from past experiences or clubs you have been involved with would be appreciated.
